Anyone know and healthy and fairly easy recipes?

Going shopping later so should be able to pick up any missing ingredients so long as they aren't too obscure :p

Chicken and Chips

1. Cook chicken in oven.
2. Cook chips.
3. Put both on plate.
4. Eat.

Not sure about healthy but that's got to be about as easy as they come. :p

Perhaps get some tortilla wraps, salad, chicken + some other filling. Would probably be quite tasty!

@ above - not very healthy but very OM NOM NOM :D

Roast chicken with honey veg.

Take chicken, smear with butter, season, throw in oven and forget about (or 20min @ 200, then approx 1 hour at 180 covered if you like crispy skin!).
Take veg, roughly chop, throw in nonstick pan and drizzle with oil and honey, sprinkle with mixed herbs. Throw in oven for approximately 45min.

Tasty, healthy meal that needs about 15min preparation in total :).

Marinaded garlic and lemon breasts:

2 - 3 table spoons of lemon juice
4 - 5 teaspoons of cruched/chopped garlic
some crushed peppercorns
a bit of salt
3- 4 corriander leaves finely chopped

Simple mix those ingredients, wrap in cling film marinade about 3- 4 chicken breats for a while (leave overnight if possible) and cook at 190 for about 40 minutes. Helps if you can cook them in tinfoil to keep the moisture in. Serve with boiled potatoes and some veg.

fajitas do pretty well for healthyness, dry fry the chicken, once it's all white chuck in some onion and peppers and anything else that you fancy, serve in tortilla wraps with freshly chopped tomato, cucumber and pepper (improvised salsa), you can choose what sauces etc you add on depending on just how healthy you want to be

On a serious note, my usual chicken recipes are:

Chicken nuggets/"tenders"
Chicken Korma/Tikka/Jalfrazei
Carbonara

And some others I can't remember, can give you a little guide if you're interested in any of the above, really easy to do.

I love marinading chicken but you need to leave it 24 hours to do it right.

Another and healthy alternative I use is to just dry marinade chicken breasts in spices. Most things work, like garam masala. Just pat it on and leave for half an hour before sticking in the oven, or shallow frying in a tiny amount of butter.

Just jazzes it up a little as it can be bland. I just add whatever I feel like at the time and never had a bad one (apart from the time I put too much hot chilli powder on them). :)

For 4 people (with rice or couscous):

3 chicken breasts
chorizo (not entirely necessary)
2 peppers (you could roast them but to keep things simple just fry them)
1 large onion
1 clove garlic (optional)
tomato puree
oregano
smoked paprika (it needs to be the smoked variety)
1 chicken stock cube
1 tin tomatoes (plus 1 tsp sugar)
salt and pepper

Oh no you didn't! Chicken does not belong in a carbonara!

@Tefal:

I'd personally go about stuffing a breast with mozarella (low fat, high protein, tasty), sun dried tomato, paprika and a little garlic, salt and pepper. Get some ruskolene, skewer the stuffing pouch shut, flour it, eggwash, bread and roast! Serve with some nice warm crusty bread and a simple salad with a nice dressing!
