Start getting a problem where on bootup one of the hard drives in a raid 0 would get an "Error Occured (0)"

It would sometimes boot to windows, but not always.
I got my data off by using a windows off a CD, so i can see all the files and access them.

I don't want to lose all the game installs etc, so could i take an image of the raid 0 config.
Format the disk that works and just transfer the image to that and get rid of the faulty HDD?

Depending on how your RAID is implemented, yes.
It's just 1s and 0s.

Rather than being striped across two disks (something which is not preserved when you back up the image) it'll just be on the one disk.

One bleeding obvious thing to point out is that it will work as long as the two drives aren't more than half full since RAID-0 gives you the total capacity of the two drives.
