we went June 2012 for our honeymoon. Excellent hotel (playa de muro) great food & the beach was a 1 minute walk from our room away.
weather was 28-30c all 11 days with sun for 12 hours a day. So good in fact we're going back for our 1st wedding anniversary next year.
Total cost for flights & hotel was £1500

For £1-2k you will not get luxury 5 Star in Seychelles or Maldives. I'd doubt Mauritius or Phillipines as well.

So you have to decide if you want the luxury hotel and the upmarket locations? I would suggest you do not go for the fancy location, as you can get beautiful beaches and great weather without paying the premium. Admittedly you will miss out on the luxury.

Mozambique - beautiful beaches, 5 star hotels (though eco-tourism, so maybe not as plush), and you can also go on safari.

Thailand - Phuket, Koh Samui or Koh Phangan - all stunning, you can get cheaper flights to Thailand than most similar destinations. The standard of service out there is amazing and the quality of hotels great. Do your research and you can find an excellent 4star that would be considered 5 star by most. Look at the Centara group of hotels in particular. You of course have all the culture to see whilst you are there, as well as scuba diving.

Sri Lanka - Within your budget you will struggle to get to the amazing hoels, but you can get perfectly nice 4/5stars within the budget. Amazing beaches, wildlife, jungle, culture.

India - Goa/Kerala - Again you will struggle to get the whole lot for £2k, probably would for £3k and of course the beaches are incredible and there's a hell of a lot of culture to be seen, admittedly much less in Goa than elsewhere in India.

Malaysia - You should be able to get to Langawi or Borneo within your budget at 4 Star places. An amazing place, especially Borneo. Orangutan sanctuaries set around hotels in the middle of the jungle. Amazing beaches, great food.

Argentina - I would recommend Bariloche and Buenos Aires - I'm pushing your budget now.

South Africa - Cape Town, Stellenbosch and the start of the Garden Route. Have a look, it's one of the most beautiful parts of the world.

The world is your Oyster, just be realistic about your budget.
