I've owned both a single 980Ti and 980 SLI, my answer is single 980 Ti all the way. Less hassle and you know you're getting all the performance all of the time.
Just about anything will be playable but expect to run a mixture of med/high settings and lower/no AA.
If at 60hz I'd say a single 980 is ok for 1440p, but to be honest I'd never buy a 980 at the current price as the 980ti is better value imho.
I'd probably also choose a 980ti over two 980s for 144hz.
