According to the younger element of my family, Fabric is great.
It only reopened earlier this year, after being closed in 2016, allegedly because of the drug related deaths of two patrons.
It was infamous for the long lines of unlicensed cars and drivers, that lined Charterhouse Street, importuning all and sundry, with whispers of, "Taxi sir."
If you go to Fabric, avoid those guys like the plague, they charge what they think the punter will stand for, and if you have an out of town accent, that will raise the fare.
Very popular this, and quite close to my house, no idea how good it is, don't drink beer, mostly vodka.
L.B.E may be good, but as a lifelong south London resident, I've never been interested, I figure that there's not much about Southwark that I don't already know, but I've heard a couple of bad reports about the place.
Don't take my word for it, check it out from the outside first, I think that it's £18 a pop, and you may have to book online for that.
Maltby Street market gets consistently good write-ups from the locals, including me, excellent food produce.

If you'd like a bit of a walk and to avoid tourists....then start at the o2, get the cable car across to the north bank and then start walking East along the river.
First stop is https://en.wikipedia.org/wiki/Royal_Victoria_Dock_Bridge
You get a good view over City Airport but there might not be any flights depending when you visit. Good views still.
Then walk south a bit to Thames Barrier park https://en.wikipedia.org/wiki/Thames_Barrier_Park. It's an interesting little park and you can get a good view over to the Thames Barrier.
Then the next stage is a little industrial (you could cheat and use the DLR to get here)....but you end up at the free Woolwich ferry....which hardly any pedestrians seem to use and probably fewer tourists. It's a fun way of crossing. The alternative is you can also walk under the river here https://en.wikipedia.org/wiki/Woolwich_foot_tunnel
I'd then recommend a drink and bite to eat at Hop Stuff's brewery tap room.

I went a few years back and I think if I went again I'd feel most comfortable in smart casual wear, chinos and a shirt would be fine. Just don't look scruffy
I've also lived in SE London for over a decade now and I've been twice. If I have to show more peeps around London I'll take them too, because it's awesome. It's more of a fright show than anything educational. Great fun, you should do it.
