op should have asked the chap that to try and work out his reasoning for wanting to do it the way he suggested.

but yea as above, buyer is probably thinking he dodged a deal on a stolen bike now

I would have offered a hand written receipt, but eBay is proof of the sale.

Sounds like he's just trying to make sure its not stolen. Perfectly understandable when buying a bike of eBay.
