Definately the two Zero 7 albums "Simple Things" and "When It Falls" and along the same vane, Nightmares on Wax's two albums "Carboot Soul" and "Mind Elevation." :)

Nightmares On Wax - In A Space Outta Sound is even better imho.

Also check out Hybrid - Morning Sci Fi, Faithless - No Roots and some Sigur Ros.

The first two Zero 7 albums and anything by Air!
ASasddgf. As I clicked the title I'd thought of exactly what I was going to write and you went and bloody said it near word for word. I'd add Boards of Canada, Mogwai and The Postal Service for a bit different chill-out. :)

I listen to a far bit of 'chill out' music...my favs include (some already mentioned)

Ulrich Schnuass
Boards of Canada
Air
Lemon Jelly
The Orb
Royksopp

I so miss the Blue Room - BBC Radio 1's only decent show worth getting up for :) they played so many decent tracks...one of my fav discoveries was

Lali Puna - Together In Electric Dreams (absolutely beautiful cover)

For slightly diff stuff try:

Logical Progression / LTJ Bukem (DnB)
Turin Breaks - The Optimist LP (indie chill)
Rae & Christian

Anything from the "Late Night" or "Back to Mine" series would do the trick. I like the Underworld BtM particularly.
