Go for the i5 for sure. overclocking is fairly easy do make sure you have a decent cooler and make sure you read up about voltages :)

sell the 480's while they still hold value, I've seen people selling them for £60-£80 so choice is yours :P

go with Nvidia, can always upgrade to 2x 670 when you require too :)

go for the i5 3570k as the other guys said, overclocks nicely when you need some more upppphhh :)

buy a quad core bundle for about £150 including ram/mobo/cpu :) used of course.
