You don't have to license every single core on the server, the physical server could be used to run a VM with a small number of cores assigned to it. Have you checked the feature list between standard and enterprise? If you are not using the features then getting Standard licenses would also...
To setup the firewall rule to allow the LAN and new wireless subnets to talk, go to Firewall > Rules > Floating and add a new rule. Select both the interfaces and change the protocol to any, all other settings should be fine as default. Save the rule and reload them then test connections.
The 8 x 900gb drives is a better option, the host OS and domain controller will be doing almost nothing most of the time anyway and this would give better performance for the file server. Does the server have a decent raid controller with cache?
I've heard that book is very good starting point and there are tons of videos on youtube, you don't really need a lab to start just open the ISE and start trying some get- commands and look at the help system. If you want to create an AD lab then learning how to create users from csv files would...
Not all versions of server licenses have downgrade rights, but all CALs do. Which forest they are on does not matter, it's the physical servers which need to be licensed. If their infrastructure already has datacentre VLSC licenses you won't need to worry but if using standard retail licenses...

Unless you really know what you are doing I would stay away from switch based QoS and look at router only, even something like a TP-Link W9970 can do this although it only has 100mb ports so might not be fast enough for a Virgin line.
Have a look at this faq to get started...
I don't think there is a way but if you share the calendar using powershell and set the -SharingPermissionFlags $true the users will get an invite and then if they open the calendar once it should stay in the list.

I have just installed the Gigabyte Windforce card and I can say it's a great upgrade for me.
I won't be doing much bench marking but because cpu bottle necking is a concern I did a basic comparison using Sniper Elite 4 in the Rifle Range. This is at 1080p using the ultra preset on D3D11
