Get something recent with plenty of cores, so you can pin cores/threads to the game dockers.
I run a 5600X with 32GB of DDR4 memory in my Unraid server. I'd want something with more cores/threads for your use case.

I have a Pixel 4a 5G, in an ideal world I can avoid e-waste and spending more cash, if I can find a suitable custom ROM for it. Maybe Graphene OS or Lineage OS, either pared down as much as they can be, might do the job.

Having a separate partition for /home is definitely a good idea, although I prefer having it on a separate drive if at all possible.
As you say, you can then preserve that drive / partition and change the /home mount point on any new distro you install.
