Your cheapest option is a mini dp to full dp cable. Dual link DVI cables are expensive. I have my retina macbook pro hooked up to a Dell 2713hm with no issues using said cable.

The 11" MBA has a better resolution than the 13" MBP in terms of overall pixels. Don't underestimate the power of a 2012 13" MBA w 8GB. My 2011 w 4Gb is perfect for almost everything.

If you have purchased legitimate iTunes video content, the AppleTV is your best option. Plex won't play videos from iTunes because of DRM.

a dual g5 with 6gb of ram would have gone for a fair amount on the bay. surely a hard drive would have been cheap enough to replace rather than gutting it!!

You probably know already, but if you don't: All recent Mac Mini's can do dual monitors natively. All intel iMacs have been able to drive an external monitor as well as it's own. Latest 27's can drive two external monitors for a three screen setup.

They're not going to produce one 16:10 iMac and 2 16:9 iMacs....
