I've heard of issues with Sky HD and these before, AFAIK it's because Sky HD boxes output a silent audio stream over optical even when in standby (i.e. they don't actually turn their optical output off). Don't know if either the PS3 or XBox 360 do anything similar though.

PS3 media server transcodes video on the fly (to MPEG4 afaik) to make it playable on the PS3, so I'd guess you're being limited by the speed your PC can convert the video rather than the actual network connection. Maybe check PS3 Media Server's CPU usage etc to check this.
