I purchased a new motherboard (Asus P5KC) to eliminate it as a possibility. The voltages now appear correct, so I suspect that the Gigabyte was not reading it correctly.
However the error is still happening. I have now replaced the PSU and the mobo, so the problem must be with the RAM or...
I have taken the entire system out of the case and set it up. This makes no difference to the symptoms / crashes.
So it's not a shorting on the case issue.
Unfortunately it is very unstable - I am getting BSODs as detailed in my older thread.
At first glance it appears to be a video driver problem, but I want to understand the strange power readings first as I suspect they may be the root problem.

Indeed a good idea, however unfortunately the my Gigabyte BIOS (I have tried the F2 version it shipped with, and I have flashed to the latest F4 too) only shows a green 'OK' next to the voltages, which is pretty unhelpful, hence why I have had to resort to taking software readings.

At 2.0V I ran Memtest86+ for 1hr50m:
Test 8 (the one that was giving errors) ten times
Full tests 1-8 twice through
No errors! Time for some game testing.
I'd still be interested in some info on the voltages I am reading on the 12V lines though...
I have increased my RAM voltage to 2.0 from 1.8, will report back on whether this makes a difference on Memtest86+ and actual game stability.
I would however really like to know about those 12V values I am seeing. Anyone know about that?
Yes, I did confuse it. I have now downloaded the F4 for the P35C-DS3R.
It is a self-extracting archive that gives the following files:

I've downloaded the F6 BIOS from Gigabyte's site for my P35C-DS3R, but the executable is not compatible with 64-bit Windows. I can't see any mention of flashing under 64-bit Windows on Gigabytes site.
