Once you have found which network offers broadly the best signal it might be worth looking at the MVNO's who operate on that network for example Smarty on Three or Talk Mobile on Vodafone.

I've never had an issue with Sky, always been a solid connection whether delivered via ADSL, FTTC or FTTP.
I've always found BT offer a marginally better latency than Sky (1ms or so) for some reason, however the Sky connection/latency is stable and you're unlikely to have any issues...
Unraid can indeed run torrent clients, most people do so using docker. I personally use binhex qBittorrent docker which riutes all torrent traffic via a vpn service
Im fortunate enough to live in an area where openreach have installed underground ducts for FTTP and its definately preferable to overhead poles even with the associated groundworks. Whilst I understand the reasons for the installation of poles, they do seem like a backward step in many respects
Ive had a seperate ssd for games for a number of years but recently upgraded ny system and threw in a 2tb WD nvme drive as part of the upgrade. The nvme combined with gigabit internet, i can see no reason for a seperate drive anymore.

Ive personally had a positive experience with VM's broadband, the Gig1 speeds are consistent even during peak hours although I think it helps that Openreach FTTP has long been available in my area alleviating contention issues I guess.
The TV has been good too, I miss some of the UHD Sports...
The final stawer for me was when i was in Stafford Town Centre, not a huge town, bit a county town non the less and the data was so slow i could barely load a webpage. Ive since moved to Talkmobile (Vodafone) who are superior in every way
