I can't figure out why changing the date on the iPhone to a future date fixes the issue though.

We've not tried factory reset without restoring data yet but it did cross my mind. She pays for extra iCloud so everything is backed up and visible on iCloud.com but not any new images she's taken since the 2nd December.
