In the Directory Utility that you use to bind the Mac to the Domain, in the Advanced Options ensure that 'Use UNC path from AD to derive network home location' is checked and set to SMB. This will mount the users home directory on their Dock.

Compile, Run to test and then Save as an Application and put it in your Login Items.
I believe Barefeats have tested the ATI 5770 in a Mac Pro 2007 and it works, check out the MacRumours forums as there has been a lot testing done with the 5770 and 5780. Mac Pro 2008 models and newer certainly work.
The proper Apple way of deploying images to multiple clients is using Apple Software Restore (ASR), this is what I used to use for our Mac lab.
However we now use Symantec Ghost as it now supports HFS and all our Macs use Intel processors.
Have you updated the firmware yet or did it ship with the latest version?
I updated mine the other day from the first revision and have noticed a slight improvement.
Ive read that some drives are not been recognised by OSX when running the latest firmware. There is a thread about this that was posted this week I think so you probably want to check that out if you plan to get a WD black or Cuda 7k drive.

Deep Freeze comes with an admin console that will allow you to unfreeze/freeze machine groups all at once. You can then use ARD to deploy packages to each Mac or deploy Unix commands/scripts. You might also want to look at McAfee or similar Antivirus/Malware solution that you can remotely...
Should work fine even if they are different, you will just need to re-install the drivers for the different hardware. I use one standard image to ghost Samsung, Dell, Toshiba and HP laptops. The only modifications I make is change the SATA operation in the BIOS to legacy/ATA after imaging.
