Ah finally solved it! I removed the filter file found in /etc/vfilters for the domain I was having problems with, and it seems to have fixed it! Not quite sure why though as I've not changed that file for months...but oh well! :o

I couldn't find those exact log names, but found a maillog and an exim_mainlog file so tailed those. Yeah :( Only seem to have the option for non-glossy on 15" and above. Although I must say I was extremely anti-glossy screens, but having used it on my MacBook for a while, it's not quite as bad as others I've seen/used and doesn't really bother me at all now.
