You would be better off using something like Plex to share media throughout your network. The Pi could definitely do that - but wont have enough power to transcode media so it's important that your devices can directly stream the media.

What splitter are you using? I suspect all the splitter is doing is sending the same output to both monitors. You need something a bit more fancy for it to tell the laptop to output 3840x1080 and then split the signal to each monitor. Also in doing it this way you lose a lot of built in windows...

You should be fine in terms of power requirements. In respect of the age of the PSU that's really up to you - if you've got the budget available an investment in a new PSU, potentially at a higher wattage, will of course last beyond this little upgrade and into future builds.
