I don't use it myself to stream to an Xbox 360, but I know it can do so and it's software I use almost daily. Try Plex media server on your desktop. It can also do transcoding on the fly that'll make use of your 2500k CPU.

I'd say save the cash and go for the base i5 - it's what I did and haven't regretted it once.
Only reason to go for the i7 15" is that it has 512MB VRAM instead of 256MB if that's needed.
Went for the antiglare screen too - not keen on glossy.
