I'm having the same issue but with the Gigabyte x570 Gaming X board.
Bios resets every shutdown/restart preventing me from using the XMP profile.
I havn't tried updating the bios though. I'll give that a try and report back.
I would have used a DVI to DVI cable with my old 7870 but the cable that came with my monitor was DVI to VGA so I had no choice but to use an adaptor.
I'll see if I can get another cable, a DVI to HDMI should fit with no adaptor needed.

I think my old 8800GTS only supported 1440x900. Although I'm not really sure so take it with a pinch of salt.
EDIT: wiki says 2560x1600 can be done with selected cards.
