To be honest what you have said is what I have been thinking, so I may just go for a single 390 (I don't have the 290's now... i'm using on board graphics :() and wait to see what gets released down the line, or what drops in price when the new 8Gb HBMs come out.

Good news!- got it working at last. Seemed it was a GPU driver error as I couldn't get Catalyst to open at all. It took me over an hour to uninstall the AMD drivers as it wasn't uninstalling as it should the normal way (prety sure it was caused by Windows 10 auto-updating the GPU drivers)...
