I'm looking to replace these with a 5770 1gb single for the moment then eventually another for CF, will I see a performance hit running the single 5770 over the CF 4850's?

You will see a drop, as to how much of a drop you will see will depend on if you're willing to clock your 5770. 5770s clock very well, in fact a 1ghz 5770 can produce similar performance to a 4890 so can gain a huge amount of performance via overclocking. There was an article i think guru 3d did on this documenting the performance increase (i think it's mentioned in the 5770 thread). Should you sell those 4850s and get a second 5770 you will see some big gains, 5770 crossfire for what it is, is incredibly powerful.
