Such a hard decision between RX 5700 XT and 2070 super, i know 5700 better value for money and the 2070 super is a few % faster.

Look up AOC Agon AG352UCG6 - it can be found elsewhere and perhaps just about squeeze that and a 2070s into your budget. 35" Ultrawide 3440x1440.
I have the above panel, and have compared it to much more expensive ones side by side, it's very good value for money and the quality if you get a decent one is spot on.
I wouldn't go back from ultrawide, but some prefer normal 1440p screens. Maybe have a look at both options and decide based on what kind of games you play.
