Yo man! If on a budget then Quad core now with a nice B550 mobo means you will more than likely get a stellar upgrade path to Zen3 and at least 16c/32t or beyond, damn kickass if you ask me!!! Especially if paired with some nice DDR3 from the outset

This has gave me an upgrade itch...would be a cheap upgrade from my i5 2500k.

Not sure to go for something with more Cores and Threads though...I don't upgrade often.

I'm still rocking the i5 2500k like you.

I'm tempted to upgrade currently but think I will wait for new AMD processors later this year and bag a bargain 3700x or 3900x. Gotta be worth getting more cores now, based on how reluctant we are to upgrade it seems. I want 8 core minimum to see me through the next 5+ years.

If you even wait a month until B550 boards come out then start with the 3300x...then plenty of upgrade paths over next few years 6>8>12>16 cores

Will B550 support anything after zen 4000? AMD said AM4 supported until 2020, so Zen 5000 (?) could be on different socket?

but how does it compare with a second hand 1700 or 2600 for £75 ?
1700 or 2600 will have the advantage in threaded situations e.g. newer games, and for "serious" work, however 3300X will have the advantage in most current games due to increased IPC, better Memory support etc.
1700 is probably a better choice than 2600 if looking for longevity, as it has 8C/16T the same as the forthcoming console updates.

Not sure to go for something with more Cores and Threads though...I don't upgrade often.
Go for 8Core /16 Thread if looking for longevity e.g. 3700X

Will these just slot straight into my Gigabyte AB350 Gaming 3 board (currently with an AMD5 1600?) and f50 BIOs?
If it already has support for 3xxx series chips (e.g. 3600/3700x) then should just drop straight in.

Depending on your budget. Go for this with a decent B550 motherboard then you can drop upgrade (s) for years to come. PCIE 4.0 and Zen 3 will last you a long time.

It will be on a different socket, plug in a cheaper CPU now and later add cheap upgrades. A decent B550 should take a 4000 series 16C.
