Nvidia will be releasing an Nforce 5 Intel edition chipset for motherboards, which fully supports Conroe, and SLI. Those boards should be available soon.

Intel chipset boards are only prevented from supporting SLI by nvidia's drivers. There are hacked drivers which enable SLI on intel 975X motherboards, but if you go down that route your gambling that you can find the drivers, and to get driver updates, they would have to be hacked too. Frustrating to know its purely software that prevents SLI on intel chipset boards.
