Not sure how good my temps should be with my setup.

Currently my CPU idles around 36-37 Celsius, and my GPU at 34-35.

Under load my CPU reaches 50-55 Celsius, and my GPU reaches 65 Celsius.

You can see in the image all of the other components.

My room temperature is 23 Celsius and the computer is entirely air cooled only.

Would I benefit from water cooling?

Using an NHD15S with my 3900X

I've always considered water cooling but if there's no benefit with my current setup then that's cool. I just want to make sure I couldn't get much better performance or something if everything was 10 degrees cooler :)

Ahhh, very good cooler indeed... You won't benefit much from Watercooling, it does have its pros and cons though

Good temps, so unless it's too noisy under load no reason to do anything.

If it is noisy under load, tell us what case, case fan setup, CPU cooler, RAM and GPU you have. Then we have info needed to make intelligent suggestions. ;)
