GPU wise, I got a 1060 3gb maybe a year ago 2nd hand for £100 and I'd be confident of getting a fair whack of that back now (maybe £75) which suggests that while not great, they are/were sweet value. New games may want 6gb over 3 but most will still be kind on it. Buying new today, I'd probably go 1660 super.
Rest of system if ready for a change should be budget ryzen. About a year ago, again I got ryzen 3 1200 for £50 at time of new mobo and got £40 back a month later when getting 3600 and bios had been updated.
