CPU and motherboard recommendations

Building a pc for my son for Xmas and managed to bag a 3060 ti. Now unfortunately the 3600x and 5600x are really difficult to find in stock and at a decent price. So I was thinking of getting a 2600x to tide my son over until the 5600x comes down in orice, but it seems they're not compatible with b550.

What would you recommend? I see a few options but open to any other ideas.

1. 2600x with a x570 board
2. 3500x with a B550 board
3. Forget AMD altogether and go for some sort of intel setup.

Ideally looking around £250 max for the CPU and motherboard combined.

Out of those, I'd choose the 3500X and B550, but it's also hard to get one at a decent price.

The 10400F linked above has HT, it's a faster CPU.
