I think it all hinges on the Gin you are using (as a few of us have posted previously) hmm, I never knew Plymouth Gin was a type of gin, I will have to try I think. Unless wiki is telling fibs again

I'm pretty sure it's the tonic that gives the bitter taste, because the idea of G&T in the first place was to make the very bitter tonic water more palatable.
