New wheels thoughts?

Not sure thats an issue, neither the SE nor the M5 have brake cooling ducts so I dont really know why they are there.

If a 400bhp M5 or a 286bhp 540i SE don't need them why does a 530i Sport?

It is part of the Sport grille.

Remove front bumper.
Remove grille.
Fit M5 grille.
Refit front bumper.

Are the brakes themselves the same in all 3?

No, the M5 has bigger brakes but the rest of the range is the same - 530/540 have bigger brakes than 525/520.
