Is it worth paying£1000 for the below? It's not for gaming but for heavy workload, multitasking.

You can find a better deal for multitasking and workload than the 5600x - even older generations will be better 3000 series (e.g. 8cores / 16threads)

Is this a pre-built? You will generally get a better deal building it yourself.
