Yep, any vinegar will work but you want to affect the flavour as little as possible.

Yes, it causes the egg while to harden faster, which helps keep the egg from falling apart as it cooks.

A 1.5kg spatchcocked chicken cooked for 1hr @ 200c. I can only assume you've only ever eaten very dry chicken
