Get drunk and run around shouting "SHIVER ME SHAMROCK, FAITH AND BEGORRAH!" at the top of your lungs in the worst IRish Accent you can manage.

You'll get the REAL Dublin experience.

Regarding the Guinness factory - of several people I know who've been, each one has said it was disappointing and they didn't reccommend it. When I was in Dublin, heeding this advice, we went to the Jameson's distillery/museum instead and that was a decent time.

Other than that and drinking, the boat trip out into the bay is pretty damn fast and wet, certainly reccommended.

There was also a good literary pub crawl we went on. Basically two guys taking you to some historical pubs where you have a beer whilst they enact scenes from Irish playwrights' works, or recite James Joyce. It's mildly cultural, you get to drink and it's done with humour too. Good times.
