I don't know about iPads but with iPhones you shoudn't buy the Verizon ones as they work using CDMA not GSM.

Also just a warning the iPads with 3G/4G capabilities don't have international warranties.

There's a T-Mobile and an AT&T/Verizon version of the iPad in the US with 3G/4G, you should double check first, but I believe the UK one is the same as the AT&T one, whereas a T-Mobile one has almost completely different radio bands in it.

Edit: Verizon one is different, it's 'just' the ATT one that closely resembles the UK/international ipads by virtue of supported radio bands. http://www.shellypalmer.com/2012/03/verizon-ipad-4g-vs-att-ipad-4g-which-to-buy/

Be warned, you may be advided by the sales rep that the AT&T ipad will not work with other providers as it is locked. This is not correct, many of the sales reps just are not trained to support exporting customers. Which is understandable. I had this problem in best buy. Plonked a O2 sim card in and it works fine. Good luck.
