I'm not the most technical guy in the world so I want to know what the best options are for running Photoshop and Premiere Pro on a budget laptop.

So that I have some idea, what is better for performance?

Processor: Intel i5 (8th Generation)
Processor speed: 2.4GHz (4.1GHz Turbo)
GPU: Nvidia GTX 1050 3GB

or

Processor: Intel i7 (8th Generation)
Processor speed: 1.8GHz (4.0GHz Turbo)
GPU: GTX 1050 2GB

Also, will SSD improve performance over HHD?

It depends on how long each chip can hold boost and how long the tasks take. Usually the chip with the higher power draw is faster, but not always.

Do you know what processor model numbers they are?

I think the first one is the i5-8279U, but I'm struggling to find the I7.

SSD will definitely improve performance over a Hard Drive or Hybrid Drive. (Although comes at the expensive of capacity)

EDIT:
Found it i7-8550U

Of those - 9300H if performance is the main factor, 8550U if battery life is your main factor
