What camera do you recommend going for:

Sony a7iii with enough money to the purchase the kit lens.

Sony a6500 with enough money to buy a decent lens, a crane and some extra equipment

Or should I wait and see if the Rumoured Sony a6700 is released in September?

My budget is £2000

I'll be using it to film and take photos of adventures, family events and possibly weddings.

I really want to get into landscape and portrait photography as well. Not as a career but as a hobby.

You want to carry camera comfortably when moving in nature?
That will easily need couple lenses which can start making bulk and weight depending on system.
For example very wide angle lens and more normal zoom, or even some kind tele if you're into smaller/farther away details.
(and if expanding to more general nature photography for example butterflies can be nasty without long tele)

For other uses you'll again need some decent fast f-ratio lens, or two.
First that "normal" lens for pics if small groups of people and then "short tele" focal length lens for portraits.
